Karie's Honey Pancakes

Pancakes:

5 cups wheat flour
8 tsp baking powder
2 tsp salt
2 TBL orange zest
10 large eggs
3/4 cup honey
4 cups orange juice

Mix flour, baking powder, salt, and orange zest in a mixing bowl. Add eggs, honey, and half the orange juice. Beat with a whisk until smooth. Add the remaining orange juice and whisk until fully incorporated.

Put a light layer of oil on a seasoned or non-stick griddle and heat to 375 degrees. Use about 1/2 cup of batter for each pancake. Cook until bubbles form and pancake is firm enough to flip. Flip and cook until interior of pancake is cooked, which can be checked by opening a small flap on one of the pancakes.

Orange Syrup:

1 stick (4 oz.) butter
3 TBL orange juice
1/4 cup honey
1/2 cup brown sugar
1/4 cup maple syrup
1 TBL orange zest

In saucepan, melt butter and add orange juice, honey, brown sugar, and maple syrup. Boil until brown sugar disolves. Add orange zest and stir. Allow to cool slightly before serving.
