Guinness Cupcakes

Cake Ingredients

1 cup Guinness beer
1/4 pound (1 stick) butter
1/2 cup cocoa (Hershey's, not Dutch process)
2 cups sugar
2 large eggs
3/4 cup sour cream
1 TBL vanilla
2 cups all-purpose flour
2-1/4 tsp baking soda

Process

Melt the butter in the Guinness in a saucepan or in a bowl in the microwave. Transfer to a large mixing bowl and mix in the cocoa and the sugar. Stir until everything dissolves. In a separate bowl, beat the sour cream, the eggs, and the vanilla until smooth. Then mix everything, including the flour and baking soda, in the large bowl and beat with an electric mixer at high speed for about 1-1/2 minutes.

Fill cupcake wrappers in a cupcake pan about 2/3 full. Bake at 350 degrees for 15-17 minutes, until a toothpick comes out clean. Cool and frost. Makes about 24 regular sized or 12 mammoth cupcakes.

Frosting Ingredients

6 oz. cream cheese
3 TBL butter at room temperature
6 oz. semi-sweet chocolate, melted and cooled
2-1/2 cups powdered sugar
1 tsp vanilla
1/4 cup heavy cream

Process

Mix the ingredients with an electric mixer and beat at high speed until it's whipped and fluffy. Spread or pipe onto cupcakes. Note that this frosting will be very stiff. It can be thinned with more cream, but may become sticky.
