Dave's Buttermilk Pancakes
2-1/4 cups flour
1/4 cup sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt
4 large eggs
1/3 cup canola oil
4 cups buttermilk
Mix all dry ingredients in a mixing bowl. Add eggs, oil, and half the buttermilk. Beat with a whisk until smooth. Add the remaining buttermilk and whisk until fully incorporated.
Put a light layer of oil on a seasoned or non-stick griddle and heat to 375 degrees. Use about 1/3 cup of batter for each pancake. Cook until bubbles form and pancake is firm enough to flip. Flip and cook until interior of pancake is cooked, which can be checked by opening a small flap on one of the pancakes.
The brownness can be varied by changing the temperature of the griddle. Higher temperatures will result in browner pancakes.
Serve with butter and syrup. We prefer imitation maple, but apparently the real things tastes pretty good to some. For a real treat, top them with whipped cream and sweetened strawberries.
Chocolate chip pancakes result when you sprinkle a handful of chocolate chips over an order of five pancakes prior to the first flip. Double chocolate chop pancakes result when you add chocolate syrup to the pancake mix before cooking the pancakes.
