Asian Salad

Spicy Asian dressing

1 cup soy sauce
1/2 cup sesame oil
1/2 cup brown sugar
1/2 cup green onion, minced
2 TBL minced garlic
2 TBL applesauce
1 TBL chopped ginger
1-1/2 tsp chili powder
1TBL sesame seeds
1TBL honey

Stir fry

1 oz. canola oil
2 Oz Soba noodles
2 oz. red bell peppers
2 oz. broccoli
2 oz. bean sprouts
1 oz. red cabbage
2 oz. Napa cabbage
2 oz. asian dressing

Finish

2 oz. mixed greens
8 slices cucumber
1 TBL slivered almonds

Process

Mix all ingredients of Asian dressing the day before and let stand overnight in the refridgerator. This recipe will make several servings.

Heat canola oil in hot wok or saute pan and add remaining stir-fry ingredients. Stir over high heat for about two minutes until peppers and broccoli are tender crisp. Serve over a bed of mixed greens and garnish with cucumber slices and almonds.
